    La cocina mexicana ha destacado en el mundo por su rica variedad de manjares espléndidamente condimentados; en ella, se aprecia una larga ruta de hallazgos y combinaciones de ingredientes, también la suculencia de los platillos mexicanos que emana de una constante preocupación por halagar al paladar, al olfato y a la vista, mediante la riqueza de los nutrientes y delicadez de sabores, buscando enriquecer y refinar la practicidad culinaria. El análisis del presente trabajo se estructura a partir de una aproximación teórica y práctica, mediante la aplicación de entrevistas semiestructuradas a miembros de la localidad de Valle de Banderas, que representan una riqueza patrimonial en la gastronomía. Parte de los resultados encontrados es base central del patrimonio oral gastronómico que rescata una influencia de patrimonialidad familiar, basados en el ser espiritual marcando el paladar e imaginando lo ancestral de cada ingrediente.

    The municipality of Bahía Banderas, Nayarit, was created by decree to develop the Integrally Planned Center (CIP), giving rise to the Bahía de Banderas Trust in 1970, with the agreements signed between the National Fund for Tourism Development (FONATUR) and the State Government. Thus, the actions tending to the Riviera Nayarit project arise, one of the main points of interest of this project is the Magic Town of Sayulita, under the argument of taking advantage of the natural assets and the promise of job generation. The praxeological analysis of this work is structured based on a theoretical and exploratory approach, applying semi-structured interview scripts to six specialists, who served as key actors. The results indicate that local residents, who promoted the origin of Sayulita, were forced to leave the town. As a result, housing spaces have been reduced and given rise to commercial developments to support the phenomenon of touristification which, over time, can become tourism-phobia, which leads the tenant to reject tourism as a development strategy.
