Abstract
According to the FAO, food security is achieved when communities have constant access--physical as well as economical--to safe and nutritious food, in a sufficiently large quantity to satisfy their dietary needs, thus allowing them to lead healthy and active lifestyles. Unfortunately, a growing world population endangers the food security of a large number of people. This situation has spurred the development of large-scale food production methods that do not adversely and irreversibly affect the environment while at the same time guaranteeing the food security of future generations. In recent years, aquaculture has stood out as a viable alternative for the mass production of aquatic products of both high quality and low price, as well as a way of promoting the creation of jobs that, in its turn, improves the quality of life of many people. This paper explores the practice of aquaculture and presents its current status in Mexico and the world, with the aim of suggesting how it can contribute to sustainable development initiatives. The paper concludes with case studies of two important aquatic products in Mexico: tilapia and trout.
