Abstract
Mexico's gastronomic diversity and culinary identity make its consumers an interesting group to study, whether exploring the country's internal diversity in intra-cultural studies, or its contrast in behaviors and food acceptance with respect to consumers from other cultures and countries. This chapter presents a review of the main works that have been carried out in intercultural and cross-cultural studies either within the country of Mexico or in studies comparing with other countries and Mexican consumers. © The authors © Elsevier.
