    Holy and ritual substance used for sacramental anointment; basic ingredient for seasoning, marinating, frying and baking; also used as raw material in the elaboration of fuel, tint and medicine; for over 7000 years it has always been connected to life in common and festivity. Vegetable oil, also known as «oleum» is all this and more; with a long Mozarabic and Judeo-Christian tradition which arrived in America on the ships with Christopher Columbus more than 500 years ago and merged with local seeds and traditions. With time, recipes diversified, culinary techniques were improved and the production of a great variety of oils made of fruits and seeds, was made possible by technology. Confectionery, all kinds of fritters and condiments are some of its uses in Mexico. At the dawn of the XXth century and by North American influence, oil became the principal caloric source, a bulk merchandise, and raw matter for biofuels; it has also been signaled out as guilty of producing illness. Nevertheless, at present, oil is a dynamic and ever-changing substance and continues to be the golden and translucent substance similar to amber and honey, suitable for reunions and festivities. This is what we intend to demonstrate in the following pages.

    Auditoría de restaurantes: un proceso continuo
    (Hospitalidad ESDAI, 2004)

    For almost all people, the word "audit" has not had a good reputation. But, things have changed. In the new economy, management requires fast and soundly based decisions. In the restaurant environment, for example, it is very important to develop an auditing tool that provides information not only from the financial or operational perspective, but also from the customers' point of view. This information will permit the organisation to improve their process and to reinvent itself with innovative and attractive services and products to face the challenge represented by competition.

    Siglo XXI: el reto de ser mujer
    (Hospitalidad ESDAI, 2004)
    Bel Bravo, María Antonia
    ;
    Campus Ciudad de México
    La turbulencia que caracteriza los últimos años del siglo XX y el principio del XXI coincide con la transformación en los roles tradicionales hombre-mujer. La irrupción femenina al trabajo remunerado ha desestabilizado el equilibrio económico-social existente. Lo que no cambia es el papel preponderante que la mujer posee en la realización de determinadas tareas: cuidado de los ancianos, enfermos y niños, y para las que no existe un sustituto en la sociedad. Es una realidad que la estructura laboral se organiza como si no existiera más obligación para la mujer trabajadora, que la propia tarea en la organización; lo que se plantea como una renuncia al cuidado de los hijos y del hogar. El presente escrito pretende reflexionar acerca de lo que supondría una reestructuración creativa: la conciliación de la vida familiar y la actividad profesional, mediante el análisis de los postulados de algunas corrientes feministas.

    Una economía de la hospitalidad
    (Hospitalidad ESDAI, 2002)
    Innerarity, Daniel
    ;
    Campus Ciudad de México
    The present article is based on the idea that economic growth does not guarantee the solution of the problems of distribution, due to the fact that the union of the economic and the social is not automatic. The solution to the employment crisis will only be feasible when a multitude of behaviors and social functions are modified. These modifications must go far beyond economy, in the strict sense, and which the author includes under the generic term of hospitality as the opposite to the exclusion of the unemployed. It appears that in the present day we are assisting a perverse autodestruction of solidarity and promoting a generalized irresponsibility. A stricter formulation of the social debt is necessary, as is the reinforcement of the sense of belonging to the community and understanding of society as an agreed space for redistribution, which is designed as the recognition of a mutual debt. Politics has the precise task of contributing to the maintenance of stable social links, making them visible and practical through the supporting of values and giving order to public aspirations
