    Nowadays we are currently immersed into a society whose economy is based on the consumption of products and ser- vices, which makes us part of a market itself in our daily activities. The purpose of this article is to analyze the dynamics of topical consumer necessities in food and beverages companies within Puebla city, iin order to propound and analyze a set of factors and characteristics that will help to define the context in which consumers of the city develop and are immersed and also are influenced to make purchasing decisions within the sector. Analyzing the main elements that make up this market dynamics for the industry, as well as the main trends and concepts that define a profile of purchase and preferences for the offer and acquisition of food and beverages, a sector that represents in the city a pronounced potential influenced by the demographic and cultural environment that characterize it.

    This research focuses on the problem of stagnation of the Tourism Industry of Mexico in the last decade. The objective is to guide the consumption in the tourism sector and to guide the public policy in order to strengthen the tourism demand. In order to do so, 53 countries using the available information of the WTTC were selected, and a Tourist Consumption Index was developed to understand the way in which the variables of aggregate demand relate each other.

    New consumer's attitudes and life styles result in changes in the food industry and in self-service store business. Today, preserved and processed foods are a fundamental component in the diet, mainly for urban population. There is a new way of selecting menus both in homes and restaurant industry, supporting the development of a processed food industry, known as convenience foods, incorporating a technology that allows an easier handling both in their preparation and their consumption. Thus, there are cooked and pre-cooked foods. The higher market presence of this type of foods is due, among other factors, to a fuller integration of women in the labor world. The most noticeable consumption trend for this type of foods has its origin in Europe and the United States. There is already a clear leaning in Mexico towards this type of consumption, mainly in urban areas. One of the main reasons for this is its convenience, together with other factors (flavor, price and ease for microwave warming up). Other advantages include their long shelf life and their easy consumption. Shortcomings include difficulty to identify ingredient quantity and quality.

    Markets, traditional space of societies of consumption, have given rise to consumers who only go to markets to see what they can buy. These kinds of individuals become sheep in the hands of merchants. They are the potential consumers--not only of plastic in all its multiple versions, but also of ideas--in the «market of ideas», in the «political market» or in the «street market of culture». In all cases, it is about sub-products which sell the «facade» to clients who arrive with «empty bags»: the «open minded», indiscriminately open to the perception of their senses. The cause of such a panorama is found, principally, in the exile of reflection of human, personal and social life.
