Item type:Publication, Los fines de la universidad(Universidad Panamericana, Escuela de Pedagogía, 2018-11-28) ;Bermudez-Aponte, Jose JavierUniversidad Panamericana. Campus Ciudad de México. Escuela de PedagogíaThis article is based on the reflection on the place of superior knowledge in the University, which connects with the proper meaning of this social institution, which is the search for truth. The superior knowledge, linked to the deep knowledge of the reality, its search, conservation and diffusion, are own and almost exclusive tasks of the universities. They are the ones who, with their different activities and discoveries, advance our knowledge of things and of man. The article ends by emphasizing the importance of returning to the aims of the university. As well, the article pretends to offer a complete view of its essential features through a teleological approach to education, the unitary character that must be present in people, and the study of tradition as an accumulation of erudition and culture30 114 - Some of the metrics are blocked by yourconsent settings
Some of the metrics are blocked by yourconsent settings

Item type:Publication, El lenguaje de la alimentación y su transición en Colombia(Hospitalidad ESDAI, 2016) ;Martínez Velandia, Luis ErnestoCampus Ciudad de MéxicoFood is one of the fundamental factors for the conservation of human life, and the transformation of the product to bring it to the table is a complex study that requires a special analysis. The cuisine is a science that has two contexts mainly, the first is the process of selecting ingredients, its suitable handling from the enlistment of the raw material, through the choice of the proper technique and cooking time, and ending with the installation of the dish that will be into the hands of the diner. The second are the feelings aroused in the consumer by the product, to achieve the exaltation of senses that the dish --in its spacious symphonies of color and flavor-- may be able to communicate through visual and gustatory aspects. But even beyond than understanding at a general level what the cuisi- ne is, it is important to know the conformation, some historical background and evolution of the Colombian cuisine.16 128 - Some of the metrics are blocked by yourconsent settings
Item type:Publication, La economía creativa, una fuente creciente de desarrollo(Hospitalidad ESDAI, 2015) ;Araujo Gómez, Raquela MaríaCampus Ciudad de MéxicoIn this changing and complex world in where we happened to live in, the problems we deal with as a society become difficult challenges, which lead us to propose solutions in a different way, with different resources with regard to what until now has been done; the search for solutions with creativity through new ideas allows -among other things- the exploitation of intangible resources towards a development, which results in a better standard of living. "[...] The complexity, unpredictability and the pace of events in our world, as well as the hardness of global environmental stress, are shooting up. If our societies desire to manage their resources and improve their well-being, they will need more ingenuity, that is, more ideas to solve their problems" (Homer-Dixon, 2012). The economic and social activity in the countries has been modified so that most of the traditional industries are incorporating the values of design and creativity to its products to differentiate themselves from the competition products, in such a way that the intangible aspects of creative thinking, have become fundamental elements for the provision of goods and services. Culture as a fundamental part of intangible assets of a company, is becoming in one more of those elements, within the economic activity generated by a country, subject to the rules of the market, in what has been called the field of creative industries that are aimed at achieving their development.53 555 - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Una nueva cultura del vino(Hospitalidad ESDAI, 2003) ;González-Garza Ducoing, MarcelaCampus Ciudad de MéxicoThe culture of wine has evolved considering the climatic, economic and political circumstances of each region or country. Another factor, which also has an influence, is the changes in the consumers: knowing and trying more wines, they demand certain characteristics to fulfill their expectations. This successful growth owes much to the search for health. Various medical studies confirm the beneficial effects of ingesting moderate amounts of wine with meals. To reach this market, producers are aware of the evolution of consumers and how they can cover their expectations; the world wide tendency of consumers is towards light, fruity and cheaper wines. Thus producers are placing their wines in places where before they were reserved only for traditional or classic wines. This is the basis of this new culture of wine, which is shown by the simpleness and clarity of the concepts and is promoted by the producers and sought by the consumers. For the lovers of wine, this is a beneficial reverse, since with or without knowledge, we can try a wine based on a realistic relation of price to quality. However we should not forget that wine is an art which we can drink. It can be enjoyed much more if we have the necessary knowledge to be able to talk about it, as we drink it.8 91 - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Parámetro ético de las decisiones(Hospitalidad ESDAI, 2003) ;Ruíz Mendoza, RocíoCampus Ciudad de MéxicoThis article will try to focus these reflections about: a) The influence of taking of decisions on the basis of this culture which is characterized as post-modern precisely for its indefinition. b) If the taking of decisions, in itself, is or not naturally affected by the ethical parameter. c) If the ethical parameter should affect the decisions of private sphere or if the public sphere is also the correct place, even in the medium of post modernity. In few words we have to ask ourselves if it is the same to decide today rather than yesterday and if the parameters that are dictated by the present civilization for the taking of decisions are or are not justified. We must situate the taking of decisions in the postmodern context and attend to its repercussions; on the one hand in front of society with all its importance and social responsibility; and on the other hand as a way of constructing its own existential register, that is to say my individual definition as a person, as, in the words of the poet, "the architect, which I am, of my own destinity".1 61 - Some of the metrics are blocked by yourconsent settings
Some of the metrics are blocked by yourconsent settings
Escuela de ComunicaciónIt is proposed a reflection on the concept of culture in the field of social sciences, which allows us to understand the relevance of cultural industries in the production and reproduction of symbolic systems in contemporary societies. Understanding the meaning of the concept of culture allows us to understand the pre-eminence that the usual production of the mass media has in the formation and socialization of individuals in contemporary societies. It is the socio-historical conditioning factors and the economic and industrial nature of the various cul-tural industries that allow us both to fruitfully relate the mass media to each other and to other forms of mass entertainment, and to establish the specificities of each one. All of them are characterized by the industrial and standardized production of messages; they are cultural industries. Following some clues provided by Albert Breton, Augustin Girard, Armand Matellart and Enrique Busta-mante, we will try to understand how cultural industries work and how they are organized; and what are the dif-ferent modes of production of cultural goods. We will explain the organization and functioning of cultural industries and their various facets: socio-politi-cal, cultural and economic. From the last facet, we will ap-proach the study of the three sectors of the film industry -production, distribution and exhibition-, the specific way in which filmmaking is organized. In the end, all these elements will allow us to propose a model for the study of the production, distribution and exhibition systems in the Mexican film industry.5 119 - Some of the metrics are blocked by yourconsent settings
