    Experiencias en la docencia de historia de la educación, en la Facultad de Pedagogía de la Universidad Panamericana

    History’s teaching must answer to future pedagogue’s necessity. He should have to make himself the question: What is the interest for bachelor’s degree students to dedicate time to education history? This question has been proposed many times through nineteen years long of docent work and especially when they review the studies plan. Finally, it is possible to conclude that a pedagogue needs to know the history for the integer and effective diagnosis according to reality into he is immersed. Is a common phrase between pedagogues to say that history serves for «they do not pull someone’s leg», since «there is not new something below the sun» as the folk wisdom says, inspired in written documents previous to Christ (Eclesiastés 1, 9-11).

    Food is one of the fundamental factors for the conservation of human life, and the transformation of the product to bring it to the table is a complex study that requires a special analysis. The cuisine is a science that has two contexts mainly, the first is the process of selecting ingredients, its suitable handling from the enlistment of the raw material, through the choice of the proper technique and cooking time, and ending with the installation of the dish that will be into the hands of the diner. The second are the feelings aroused in the consumer by the product, to achieve the exaltation of senses that the dish --in its spacious symphonies of color and flavor-- may be able to communicate through visual and gustatory aspects. But even beyond than understanding at a general level what the cuisi- ne is, it is important to know the conformation, some historical background and evolution of the Colombian cuisine.

    Festejos de Navidad y Semana Santa en el Siglo XV: Las representaciones teatrales en el Palacio Ducal de Alba.

    In this paper we analyze four works by the Spanish author Juan del Encina, as part of the celebrations conducted in the ducal palace of Alba during the late fifteenth century, on the occasion of Christmas and Easter. In medieval celebrations, one can observe the inclusion of theater during these festivities as a complement to Masses, prayers and banquets. One is able to appreciate not only the religious importance of these festivities at that historic moment, but also their continuity to this day in the basic scheme of these same celebrations, which shows our belonging to a long tradition dating back to ancient times.

    Culinaria ancestral: cimiento para el desarrollo de la civilización.

    Many historians and anthropologists have written about the origin of civilizations. Different views and different opinions have been published about it. However, it is only recently that scholars have focused in the important role that food had, and gastronomy has in developing nations. Eating raw, unprocessed foods often leaves us with a cool sense of grief that very likely our ancestors also felt before knowing delicacies. For those first dinners, as well as for us, the smell and taste of the food was a world of difference. The early culinary experiences of human beings should have been worthy of mention and praise. Surely there were unforgettable moments for the commensal of those prehistoric banquets. Many palates were pleased. Unfortunately we have no written references about the preparations. Teaching kitchen was made orally and was improvised based on previous results. It is since the development of Ancient Mesopotamia that we find the first references to the importance of the food cooked for sedentary men.

    Hospitality is a notion that has lasted as long as human history. Over time, the meaning of hospitality has changed in its nature and context. This article reflects on the meaning of hospitality and changes in its meanings and context. It also explores the changes in the host-guest relationship in social and cultural aspects. By doing so, we hope to shed light on the problems associated with the transition of the 'hospitality' concept into the commercial hospitality world. Finally, this paper attempts to explore an inextricable link between hospitality and emotional labor and aid industry in resolving problems of emotional labor.

    ¿Educación diferenciada en pleno siglo XXI?
    (Hospitalidad ESDAI, 2010)

    For a long time, education, especially at higher levels, was a privilege reserved for men, along with many other male considered activities: work, production and public life. And when women received any education, it was generally focused on the development of what was considered her social role: carrying out the household tasks and serving men. It was only at the end of the XIXth century that some women had access to the education reserved for men, and it was not until the middle of the last century that coeducation was regarded as something normal. Today however, the question as to whether coeducation is the best idea has arisen. Not because women are deemed inferior, as in the past, but because of the consideration of the advantages or disadvantages of an education which takes into account the real differences between men and women, and the ways each capabilities, which in the past were considered limitations, may be boosted. This article briefly reviews the role of women in the history of education, and explains the reasons why, today, the debate on the desirability of a University for women is reopened.

    Necesidad y conveniencia de estudiar la historia patria

    The suggestive title that José Ma. Vigil assigned to a short but interesting study has been taken advantage of in order to focus herein the content of the present research. The objective is not to understand whatever occurred in our territory for more than 500 years, but to highlight the Mexicans' need of knowing our own History better, with the conviction that the past constitutes us further than ideological or religious attitudes or diverging political positions. More concretely, the paper pretends to analyze, under the perspective of some authors —quite a few, considering the wide production about this topic—, the need of recovering equanimity about the novo Hispanic reality of our tradition, regarding post-revolutionary theories that have pretended to disconnect its former historiography and cultural elaboration by substituting it with a tendency of the Jacobin revolutionary thrust that condemns all past. There is no doubt that the last generations have been formed within a mingled historic context of this time, plethoric of a positivist and liberal methodology, with a strong socialist and utilitarian influence. It is important, once the Revolution and its structures are reviewed, to look back —into the own and intimate— in order to revalue whatever this past encloses as a part of the own identity and to discern the thorns this past presents and still projects in the present.

    El espacio arquitectónico
    (Hospitalidad ESDAI, 2003)
    Vázquez del Mercado, Cristina Amieva
    ;

    Man by nature carries out his activities in spaces limited and designed by himself, however it would appear the importance to the users is forgotten until something does not function. A proyect is an element which must support itself in its structure and be supported by the people who inhabit it. This architectonic space must be the result of a detailed analysis based on the geography, history and psychology of the user and it must have an absolute communion with the environment and the construction; and naturally with its inhabitants. It is important to respect space, in order to be able to rescue the functional and dynamic sense it has, and to recognize it as responsible from its history and its time; if it does not give satisfaction to the senses it cannot be called architecture.

    La comunicación del psicólogo a través del cine : análisis del estereotipo fílmico

    The present research starts from the premise that cin-ema is a source of great interest for the analysis of the image of the psychology professional over time. The way in which cinema has represented the psychologist is, consequently, of enormous importance as a genera-tor and transmitter of filmic stereotypes. Two are, there-fore, the objectives pursued: to analyze the representa-tion of the psychologist in the cinema from 1930 to the present and to establish, based on the above, the basic stereotypes of the psychologist in the cinema that have actively intervened in the construction of models of rep-resentation of our discipline. For this purpose, a qualitative methodology of thematic analysis has been followed, selecting a repre-sentative sample and describing and analyzing themat-ic aspects such as the scenario, the evolution of the psy-chological schools represented, the staged techniques, the psychological branches present, or the social image that emerges from all this through a categorization of the filmic stereotyping. The results show an increasing evolution over the time studied of the number of valid films, their relationship with certain film genres (hor-ror, crime and forensic), the extraordinary link between filmic stereotyping and clinical psychology, the constant ambiguity with other disciplines which shows the diffi-culties of the scientific autonomy of psychology, or the concordance of our results with the studies of Sneider and Gabbard with a preference for the “Wonderful” type of stereotyping. In short, it is considered that the cine-ma, until a few years ago, has been making a stereotype of the psychology professional that has distorted our professional performance. This implies a necessary ef-fort in our profession for scientific communication.

    La nación de Televisa: historia de la expansión del monopolio en provincia
    (Universidad Panamericana, Escuela de Comunicación, 2021-11-21)
    Vidal Bonifaz, Francisco Javier
    ;
    Universidad Panamericana. Campus Ciudad de México. Escuela de Comunicación
    This work is inscribed in a academic tradition that seeks to demonstrate that monopoly is a natural process that is part of the historical dynamics of capital - determined by the so-called law of accumulation - and that therefore it is an irreversible process and that it is accentuated to the extent that this law operates over time. The history of Televisa is representative of this process and is analyzed throughout the history of the deployment of its broadcast television stations in the various states of Mexico.
