    This article presents the results of the application of the David Mersey, Calder and Mal-thouse digital media engagement scale, which measures the different types of experiences that a person has when consuming digital platforms. This instrument was used to measure consumer experiences with Netflix of 630 young Mexican university students, among which were relevant experiences that satisfy educational experiences among this study group. In the second phase of this study, 8 focus groups were conducted (46 students in total), in which it was corroborated that this platform satisfies needs beyond entertainment. In summary, students also use Netflix to learn, particularly to learn how different types of cultures are re-presented, to obtain more knowledge and context on topics of their interest and to reflect on human situations that are represented in the contents of the platform, and even use content from this OTT as a resource and educational complement.

    Given the official declaration of COVID-19 as a pandemic by the World Health Organiza-tion, Mexico declared in March 2020 the suspension of face-to-face activities in educational centers through an Agreement promulgated in the Official Journal of the Federation. This sus-pension lasted until the end of the school year, causing students, teachers and managers to implement a distance modality to continue the training process. The present study pursues the objective of determining if the degree of self-regulation of the learning of students of Middle and High school education suffered any significant change due to this new modality. For this, a non-experimental and longitudinal study was developed, with an exploratory and descriptive scope. A sample of 206 students from a private school in the municipality of Aguascalientes was considered, to whom an instrument designed to measure the study variable was applied. The analysis of results allows validating the designed instrument, by identifying good levels of internal consistency and construct validity. A statistically signifi-cant advance in the degree of self-regulation of learning in students was revealed between the periods of application of the scale, identifying a significantly higher degree of self-regula-tion in female students than in males. These results are relevant, since in addition to collabo-rating with the scientific support of the country’s official educational approach, focused on the development of competencies, contributes with an instrument for Mexico and the shed of light related to the online modality that will inevitably continue to be applied until the COVID-19 as long as the pandemic demands it.

    In the present study, 270 students participated in two samples, the first with high school students, the second with university students, both from the state of Puebla. The research was quantitative, however, the instrument used allowed obtaining valuable qualitative information. The objective was to contrast the historical test results with classic moral dilemmas. Participants faced the Trolley Dilemma, Footbridge Dilemma and Sophia’s Dilemma. The results showed that the categorization in four basic moral positions is va-lid: utilitarianism, emotivism, deontology and virtue ethics. And although quantitative results cataloged as mostly utilitarian were obtained in the first instance, the truth is that the moral beliefs exhibited in the study surpass the utilitarianism-emotivism dualism of previous studies consulted.

    From time immemorial, the social and moral development of the individual has been a subject of interest for all philosophical, pedagogical, sociological and psychological schools of thought. In this research, using qualitative case study, we intend to establish how virtues are expressed in the context of a Mexican public secondary school through contact with three teachers of Civics and Ethics. We are aware of the importance of teachers’ reflections on the moral, ethical and pedagogical commitment to their socio-cultural environment and how this affects the practice of certain virtues.

    There is something lacking in the official speech at the declaration of Mexican Cuisine as a Human Cultural Heritage by UNESCO, a new and very fashionable term: Sustainability. In the intent of changing people's mentality towards a more friendly treatment for our planet, many have tried to adequate this term to contemporary man's actions. However, this new vision, so very necessary at the beginning of this XXI Century, forgets to highlight all those activities which were already sustainable from the very beginning. This is the particular case of Mexican Cuisine, a whole nation's pride and practically a National History manual. Looking over the last centuries of our nation's life, we may notice that the maize patch has always been near the people as a food production identity. Modest and silent, it has supplied its farmers with the most basic as well as the most representative food in Mexican Food Culture. We could state that the culinary process in Mexico began at the same moment people started farming. It is only until now that we understand why in many indigenous regions whenever one refers to the ripening of fruits and vegetables, they are always described as"well cooked" or "seasoned".

    La alta cocina de la Baja California, ¿un nuevo mestizaje culinario?

    The present essay tries to give a general view of the High Cuisine that is currently being generated in Baja California. This phenomenon may be interpreted as an answer of the region to international culinary tendencies, or as a proposal developed by its own cooks. With the idea of understanding the route followed by them, the following methodology is considered: First, the existence of a huge culinary transformation in the region is outlined, which may mean, either a revolution or an evolution in the present culinary practices of Baja California. Second, I sketch the geographic framework and historical context related to the cultural task as the basis of any culinary construction. Third, an analysis of international Fusion Kitchen and what has been called a New Culinary "Mestizaje", with the idea of establishing concepts that allow us to determine the two possible directions of the High Cuisine of Baja California. Fourth, I make a particular analysis of the geographic and historical framework so as to deepen the study of this phenomenon. Fifth I outline the core issue of the thesis for future analysis. Sixth, I establish the possible conclusions of the phenomenon. All in all this essay is intended to approximate and motivate scholars of culinary arts to a possible encounter with the High Cuisine of Baja California.

    Diverse specialists, mostly anthropologists, state that the two main identity traits of people or communities are the mother tongue and food. There are many examples of this. For instance, the remarkable way in which Mexicans who forcefully or willingly emigrate to the United States maintain their mother tongue but more so their culinary customs. Some of these customs, as is the case of the «tortilla» have gone beyond the Mexican and Chicano communities and have been embraced by thousands of North Americans. The same is true in other countries with emigration. Our country has not only been the scenario for multiple cultural interchanges, but has also received, since the conquest, numerous foreign groups.

    The suggestive title that José Ma. Vigil assigned to a short but interesting study has been taken advantage of in order to focus herein the content of the present research. The objective is not to understand whatever occurred in our territory for more than 500 years, but to highlight the Mexicans' need of knowing our own History better, with the conviction that the past constitutes us further than ideological or religious attitudes or diverging political positions. More concretely, the paper pretends to analyze, under the perspective of some authors —quite a few, considering the wide production about this topic—, the need of recovering equanimity about the novo Hispanic reality of our tradition, regarding post-revolutionary theories that have pretended to disconnect its former historiography and cultural elaboration by substituting it with a tendency of the Jacobin revolutionary thrust that condemns all past. There is no doubt that the last generations have been formed within a mingled historic context of this time, plethoric of a positivist and liberal methodology, with a strong socialist and utilitarian influence. It is important, once the Revolution and its structures are reviewed, to look back —into the own and intimate— in order to revalue whatever this past encloses as a part of the own identity and to discern the thorns this past presents and still projects in the present.

    This work is inscribed in a academic tradition that seeks to demonstrate that monopoly is a natural process that is part of the historical dynamics of capital - determined by the so-called law of accumulation - and that therefore it is an irreversible process and that it is accentuated to the extent that this law operates over time. The history of Televisa is representative of this process and is analyzed throughout the history of the deployment of its broadcast television stations in the various states of Mexico.
