El artículo que se presenta a continuación explica la necesidad y la importancia que tienen en la actualidad las competencias laborales dentro de la capacitación, y expone, de manera breve, el desarrollo del Proyecto de Modernización de la Educación Técnica y la Capacitación (PMETYC) que depende de la Secretaría de Educación Pública y la Secretaría del Trabajo y Previsión Social; así como la relación que tiene ESDAI con dicho proyecto como centro evaluador, y mediante la elaboración de materiales didácticos, con base en normas técnicas de competencia laboral y su actualización

Based on the verb to build, this article proposes a reflection on the work of the Blessed Josemaría Escrivá de Balaguer, a visionary man who strove to build the future by intensely living the present with a profound love of God. He was convinced that having inherited the earth, man is obligated to work and take good care of it for eternity. For women this obligation is specified by the revalorization and Christianization of the feminine values promoted by ESDAI.

The object of this study is to evaluate the effect of heat treatment by microwaves and the use of some chemical inhibitors on the enzymatic activity of the poliphcnoloxidase of plantain (Musa paradisiaca L.). During the experimental phase the IN VITRO effect will be determined through specific enzymatic kinetics. The enzyme will be extracted and purified from the pulp. Based on the obtained results the best inhibition conditions will be selected and will be applied directly to plantain slices simulating the industrial treatment. Plantain represents the principal source of energy in certain subsistence diets. It is a good source of potassium and Β-carotene and a respectable source of fiber and vitamin C. Β-carotene, apart from being the carotenoid of greater vitaminic activity (it consists of two molecules of vitamin A), has antioxidant properties; this is the reason why it is important to extract, quantify and evaluate the effect heat treatment by microwaves, frying and the use of inhibitors have on it. HPLC will be used for this effect. The search for new alternatives to avoid the browning of plantain arises from the need to substitute sulfites. In 1985, it was concluded that they were safe for most people, however they represent an unpredictable and severe risk for asthmatic people and for those who are sensitive to these preservatives. It must be said that any person may develop sulfite sensitivity at any stage of his life. The physiological response brought upon by sulfites may go from breathing difficulty and rash, to breathing and heart failure. Since one of the alternative uses of the production plantain surplus, is as chips commercialized as snacks, they are consumed mainly by children; this must be considered as a limitation for the use of additives according to the joint established regulations of FAO and CODEX ALIMENTARIUS.

Este ensayo rescata el concepto fundamental de la dignidad humana desde el punto de vista absoluto y filosófico. De modo que el universo es antropocéntrico por la dignidad que el hombre posee. Aspecto que se encuentra ensombrecido por los nexos sociales de la civilización actual en los que la persona se ha convertido en un medio, en una pieza de recambio, con la inseguridad que esto conlleva. La familia se convierte así en el topos genuino de la dignidad humana y adquiere una relevancia cultural única. Frente al economicismo --trama que rige las transacciones comerciales--, al racionalismo --que sirve de soporte al plan impuesto por la reglamentación estatal-- y frente a los medios de comunicación, que ejercen en ambos una fuerte influencia, se yergue el mundo del ethos vital, de la realidad individual, el mundo de la vida corriente, como una añoranza. En este mundo aparece un elemento de fuerza insospechada: la amistad, ámbito de plena confianza y co-rrespondencia en la que el hombre se reencuentra con su propia dignidad. Es así que los objetivos fundacionales de ESDAI han resultado visionarios, al pretender influir, con los valores que propician la convivencia del hogar (la comprensión, el respeto, la confianza, la sinceridad y la sencillez), en las entidades sociales privadas y públicas, especialmente en las que deben ejercer directa o indirectamente la función de la hospitalidad.

Microindustry has acquired great social and economic importance in the last decade. This essay presents the characteristics and main feature analysis of this subsector of microindustry. It concentrates mainly on its structural features, fixed assets, people in employment, sources of finance and performance logic. The field of study refers exclusively to microindustry present in urban localities with a population of 100.000 or over.

Este escrito constituye la presentación de la revista HOSPITALIDAD-ESDAI, órgano académico de difusión de la Escuela Superior de Administración de Instituciones. Asimismo pretende ser una reflexión en torno a los principios fundacionales de ESDAI, inspirados en el pensamiento del Beato Josemaría Escrivá de Balaguer y un recorrido por los tres momentos que han dado identidad y proyección a la Escuela a lo largo de 32 años y que la han puesto a la vanguardia de las instituciones de servicio de la hospitalidad, al atender de manera permanente a las necesidades de la sociedad, la familia y la persona.

The analyses of female performances which rises from the struggle for vindication of women in the seventies look for a solid sustenance in various scientific disciplines. The present essay looks to rescue some of these visions which serve as inspiration for new reflections of an industry which continues to dominate the consumer market for movies at the world level.
